I have completed the Genki textbooks about a year ago and have since been on a bit of a hiatus.
I have been doing Anki on and off but I am now ready to pick my studies up again.
What are some good things I can start doing to continue learning? Because at the moment I only have Anki.

Instead of going back to n5+n4 material I think that satori reader (which is a ~n3 graded reader with lots of grammar explanations) would be a good resource for you to a) review n5 + n4 grammar b) teach you some n3 grammar, and c) ease you into moving on to native material.
If you finished Genki. You could start the Tobira book. Also reading native material.
Take a look at JapaneseAmmoWithMisa’s N5 (and N4?) playlist? Other than that, It’s consuming what you want, and working to understand that material.
In terms of textbook, the natural next level is either quartet 1 or tobira
