When I lived in Philadelphia, the Chinatown noodle shops would make their own hand-drawn or shaved noodles. After coming to Japan, I was surprised that the noodles are second-class citizens when it comes to ramen. All the shops take pride in their broth, chashu, eggs, etc., but when it comes to the noodles, they use the same ones we can all buy at Itoyokado.
So I was wondering if there are any Japanese style ramen shops, especially around Tokyo/Yokohama, that also make their own noodles, or is making noodles a thing that only happens at soba/udon places here?

Any place with 製麺 in their name are most likely making their own noodles.
