  1. I gave this a 9.6, but the explanation is cut off on this vid:

    * i love fatty tuna it’s like butter — as soon it hits the tongue it starts to melt. It’s rich and smooth
    * I don’t want to be snooty, but the caviar adds a nice creaminess that elevates the dish
    * I am in love with Tokyo Negi (The giant green onion) – it has a firm crisp texture and garlic like flavor that’s awesome. It’s different from a leek?
    * The black sesame seed adds a nuttiness that’s also nice

  3. It’s interesting you put Tokyo negi as it’s not normally put on nigiri because the rings are comically large and the texture is a little rougher than the smaller scallion. They’re usually put on everything else though because they’re so good – fried rice, ramen, yakisoba, grilled, etc
