That’s not a tendon. Sinew between the muscle fibers of tuna vary depending on which part was cut, but generally the one in the video is thin enough that it can be eaten without feeling grisly. You can even see that it’s so thin that it breaks apart when he pulled it off.
There’s parts that are way thicker and the meat is separated from it to make spicy tuna.
I remove tendons on everything I eat. They are tough.
