I have only ever had pork katsu so this was a new and interesting thing to try. The shop had really nice bamboo charcoal salt to apply on it, which was extra nice because I spent two months ten years ago in Kyushu burning bamboo into charcoal

I think it would just be sasmi katsu, as ton = pork. That looks so delicious.
