  1. The verb “tataku” (たたく) means to beat or hit (like with a stick), and this tataki kyuuri uses a blunt object to crush the cucumber into bite-sized pieces. This creates asymmetrical pieces with a rough edge that soaks up flavors like a sponge. Then you can salt the cucumbers to get them to release excess water before wringing them out and tossing them with soy sauce, toasted sesame oil, and toasted sesame seeds to season.   2. Oh , I’ve always wanted to know how to make these! They seem so simple? How long does the salad last after you make it? Is this something I could make in the morning or overnight and eat with my lunch at work the next day?
