It`s kinda rare. But I`ve found a somewhat firmer tofu that`s sold as 島豆腐 in my local OK supermarket.
I`ve heard that there`s also a kind of tofu from Toyama area called 石豆腐 but don`t quote me on this.
Firmer than momen?
I’m not sure how firm you are looking for. Momen is in every store
Momen Tofu (もめん豆腐) Firm Tofu – For stir fry and cooking. Labeled “木綿” or “もめん”
Maybe a couple of variations you want to try
Shima Tofu (島豆腐)– Very firm tofu from Okinawa, mainly used for stir fries.
Sukiyaki Tofu 【すき焼き豆腐)- This Tofu is pre-grilled and is mainly used for sukiyaki.
I’d recommend trying 乾燥湯葉, it’s similar to tofu but it’s closer to chicken meat kind of consistency, I think it’s often used Taiwan and China. You can get dry one in asian stores or on amazon, and gyomu has already rehydrated and frozen one which is ready to use.
It’s great in soups or stir-fry dishes when you don’t want tofu to fall apart, you can probably look up lots of recipes online.
Firm tofu isn’t rare. Most stores carry at least Kinugoshi (絹ごし) silken and Momen (木綿) firm. Like others have mentioned there’re various firmness in Momen. If you’re looking for extra extra firm tofu, I’d suggest Koya dofu (高野豆腐), freeze dry tofu. It’s high protein and easy to cook. You can find them at dry foods isle next to seaweed.
They have VERY firm tofu at Ropia. Can’t recall the name but it’s a big one (double the size of a normal one) and quite pricey. But it has about four times the density if a ordinary one… so in comparison the price is ok.
The name is something like „very firm tofu…“
It sells out quickly. If you visit only once it might as well not be in stock. Better ask someone from the shop maybe.
Do you mean Chinese/Okinawan style very firm tofu? Yes it’s rare outside of Okinawa. Do you have an Okinawan shop nearby?
You can also just drain regular tofu to make it firm. Google 豆腐 水切り to see how.
