The rice was Iris brand, Milky Queen from Ibaraki.
I used the following fish:
* Whatever saku block of unknown tuna the local seafood place had in stock. It wasn’t horrible, but I’ve definitely had better. * Wahoo from Wild Fork. Tasted much better than the tuna. * Imitation crab for the California Roll.
I just discovered Sriraja Panich Sriracha Chili Sauce, and I think it made a huge impact on the spicy tuna. I also used Japanese Kewpie.
This was also my first time trying real wasabit. OMG, huge difference. Just like with the Thai sriracha, the genuine stuff has character and not just spicy.

Next time you’ll do it in 20-30min prep time. I prep everything while the rice is in the cooker then you season and cool the rice (put it by an open window!) and later assembly.
Save more time by just tossing it all into a poke bowl. 🙂
