What is wrong with this?

  1. It looks a little amateurish to me, so not appropriate for a nicer restaurant, I’m also not down with some of these nigiri toppings, but the fish looks alright so as long as the rice is good it’ll taste fine.

  2. Too much rice in sloppily rolled cone. Salmon looks orange. Ginger on cucumbers? Avocado is cubed way too small with 6 individual peices of roe? Green onion looks soggy.

  3. Salmon looks like basic Atlantic farmed cheap stuff. Too much rice in the temaki. Tuna avocado ikura nigiri is just weird. Salmon and tuna sashimi shouldn’t be touching each other. No need to plate the gari on top of those thick cut cucumbers. Wasteful. Cut on the negi is too thick. Nigiri cuts in general are too long and thin.

  4. Oooo…this looks and probably tastes amazing….however….

The knife work on the fish is sloppy, possibly because of a knife in need of sharpening. You can see the tuna sashimi has a slight tear in it, and the slices are uneven. My guess is that it could have been cut thick and then sliced in half because not everyone likes thick sashimi slices. The avocado slices on the salmon are uneven too. Cross hatch on the tuna seems unnecessary since it doesn’t look like it was brushed with a sauce.

Also, serving salmon eggs on top of salmon seems a bit rude (like boiling a kid in its mother’s milk’s)

The hand roll is lumpy and uneven…looks a little soggy.

Ginger on top of cucumber is an unusual choice.

If I had to guess, it’s either a new sushi chef or a home cook being creative.

  5. No one has commented on the fact that the tuna and salmon sashimi is not presented in the same order as the salmon and tuna nigiri

  6. Too much salmon on the plate for my personal taste. I also don’t think things like diced avocado or slices or tobiko or ikura belong on top of nigiri like that, makes it awkward to eat for sure

  7. Depends on what OP is trying to ask for. There’s a lot wrong with it if the purpose is to measure up to the sushi orthodoxy. Kind of like how a Japanese Crown Melon would be rated as literal garbage if it’s not very round.

With that said, I wouldn’t mind eating these, along with a not-so-round crown melon for dessert. So I’d say there’s nothing wrong with it if the purpose is to have an enjoyable meal, and you don’t have a lot of baggage from the sushi orthodoxy.

  8. That ginger on the cucumber is bugging me because I know it makes the cukes spicy! Cucumbers are meant as a tasty pallet cleanser for sushi, then having even a small zip makes them less effective and kinda gross (I dislike spicy food so personal preference). Also the salmon isn’t very vibrant so it’s probably the unflavourable kind. So annoying when you get a piece like that, makes me worried if there’s something wrong with it.

Other than that I’d still devour it that tuna/pinker fish looks BANGIN’

  9. Too much rice in the temaki; salmon nigiri looks too thin while sashimi looks too thick; ikura on top of avocado on top of tuna is uhhh weird? Like ikura in particular just seems weird as a topping. Generally you just want to taste the fish by itself and this just seems too much – leave these combos for the rolls.

Weird that there’s just sliced cucumbers on the side.

Surprisingly tuna seems to look decent in terms of it not being the frozen pink-dyed tuna you see a lot of places. Just still think the salmon nigiri isn’t formed well and has been squished and just looks lumpy.
