How to make Sukiya garlic chili flakes?

This may seem like a weird question, but I go to Sukiya at least once a week, and I love the chicken leg w/ garlic chili flakes bowl. I haven’t really been able to find anywhere else that does garlic chili flakes like them. I really like the crunch and the spice level. Is there any recipe to make it at home? My guess is to make regular garlic chili flakes, then fry or dehydrate them to get the crunch.

Any ideas or suggestions?

  1. I’ve never tried to make it myself so this might not work but the flavor seems to me like mala seasoning on deep fried garlic.

    You can buy deep fried garlic online, no need to dehydrate anything by yourself. Google フライドガーリック ç²’ and that should be the same kind. Don’t get the kind that’s whole fried cloves or slices, the crunch won’t be the same if you cut it up after.

    Mala seasoning – i think the spice in the sukiya flakes has a hint of mala (the numbing sensation) but i’m not sure where the saltiness comes from. It’s not extremely salty so i think it’s probably not a mala soup base mixed in. You could probably just use mala chili powder. i found several different brands on amazon. Just search 麻辣粉.

    Mixing Fried garlic, mala chili powder, salt and ajinomoto should get you pretty close.
