On the website it lists that you need to show proof of marriage and proof of birth, and lists koeski tohon under both requirements, so I can use just one? Or can i only use it for one but not the other? ex/ use the koseki tohon for proof of marriage and then a different document such as Shusshou Todoke Juri Shomeisho for proof of child birth?

Email the consulate and ask them directly. Best way.
Yes we used one Koseki for the marriage and birth “certificate”, and the hospital one.
One Koseki Tohon will be good. Make sure to make a translation and have a copy of the Koseki Tohon that the embassy/consulate can keep.
Hot tip, take your partner’s passport as well, with a copy you can leave with them.
