Looks good! If you have leftover tonkatsu (a rarity, I know), try making katsudon.
My prefecture calls it Nikatsudon, so bear with me if the name above doesn’t include egg.
Pretty much heat your tonkatsu through, slice it, and add it back to the pan. Medium low heat. Pour egg on top, and add some dashi with shoyu and a little mirin. Put a lid on it.
Put this on top of rice. In Yamanashi, we usually serve it covered, and add a little extra dashi.
