    Shoyu Ramen: Ramen Break Beats

    I struggled with choosing a Shoyu, but I figured I’d go for the one that opened in 2022 and was most deserving of all their hype. They have a sign up system so be sure to go around 8:30 am to secure yourself a spot.

    Shio Ramen: Mukan

    Easier choice here. Mukan serves up an oyster base ramen that is to die for. Hands down best shop I went to in 2022 overall and looking forward to how this bowl evolves. The master is

    Miso Ramen: Kudanshita Nukaji

    I don’t even like Miso ramen all that much, but Nukaji is hands down the best to open in 2022. Using a solid pork bone stock as base, they play around with different Miso varieties to make some phenomenal ramen soup. Love how they play around with different combos so will have to come back in 2023 to try some of their other bowls.

    Niboshi Ramen: NIBOSHIMANIA

    Master of NIBOSHIMANIA comes from the Hechikan lineage, training at the legendary Yokohama based shop before branching out on his own. Best of 2022 was easy, this could easily be one of my favorite bowls of ramen all time. Not for the faint of heart though so I would recommend getting your feet wet at a lighter Niboshi shop before coming here.

    Jiro/Jiro-kei: Menya Hero

    A former Jiro disciple, I’m not sure the entire background, but decided to open a Jiro-kei shop of his own, rather than go through as an official Jiro lineage. Regardless, the best Jiro-kei to have opened this year in my humble opinion, and definitely top 5 non lineage shops all time.

    Iekei: Ramen Miuraya

    Not much to say here. Soup is funky, rich, creamy and they have free rice on the side. Chashu is a must and be sure to use the Kewpie mayo they provide at the table to make yourself a little chashu over rice bowl.

    Soupless/Maze Soba: Teuchimensai Kamei

    Master at Kamei used to do pop-ups at Miyamoto down in Kamata. His specialty ramen became so popular he decided to just open a shop of his own. I think he’s actually just 24-25 years old so really young, but is making one of the best soupless ramens I’ve ever had. Definitely worthy of a visit, despite it’s location outside central Tokyo.

    Tsukemen: Jikaseimen Robinson

    Lots of great contenders, but I had to go with one that opened recently in Jikaseimen Robinson. Shop is fancy as hell, but damn they make some great dipping ramen. Another shop that gets crazy lines, but if you go early enough, you can stroll through in 30 minutes or so.

  2. Lucky you!! Do you have a favourite broth? Like tonkotsu vs sardine vs shoyu etc. Would love to know what a true ramen fan likes! haha

  3. Have you been to Rikio in Tenri, Nara? Hot damn do they make a bowl of ramen. Every single person I’ve brought there has said it was the best ramen they’ve ever had.
