Question about filling out visa application for work visa

I have a visa appointment next week, and I’m trying to fill out the visa application but I’m stuck in a couple spots and figured people here might be experienced with the matter. (Hope this is the right place to ask – I’ve searched the net and this sub with as many keywords as possible, but couldn’t find a specific enough answer, especially for question 1.)

For background info, I’m applying for the engineer/specialist/int’l services visa; job offer is secured (starting April) and I already have my COE.

1. Regarding the “current profession or occupation and position” and “name and address of employer” fields; I am going as a shinsotsu, so I’ve already graduated and I’m technically unemployed at the present moment. But I do have a signed contract in Japan starting April – that is why I’m applying for the visa, after all. I’ve asked both my parents and mom says I should write “unemployed” while dad has said it definitely needs to be my (future, technically) employer in Japan. COE has the company name on it, and the guarantor and inviting person fields are also from their HR. Bureaucracy has already gotten to my head, so nothing is obvious to me anymore – which should I put down there?

2. This is more so to double check, but for intended length of stay, my work contract is full-time (not fixed) but the COE says 5 years. Am I right in writing 5 years so they match?
