  1. Overall, your rolls are really nice, you did a great job. Just want to give a little constructive criticism…First of all, your rice looks pretty mushy and overcooked. Use 4-5 Tablespoons less water next time and see how it goes. Second, when you’re squeezing sauce on your roll, move your wrist back and forth quickly across the whole diameter of the roll as you move up each piece. It will make your mayo/sauce look a lot more appealing than what you have here which kinda looks like you popped a zit over it. Your middle roll and hosamaki look great though. Your cuts are even and consistent, and the plating and presentation is very nice. Keep it up!
