My mother ran a sushi business out of the back of a Hawaiian bar for years. Since she was often there during the bar’s evening rush, prepping for the next day, she got some of the plates and started selling steak dinners to the bar patrons. They were a huge hit. I was in charge of keeping the plates and tongs cleaned and seasoned. Treat them well, and they’ll last lifetimes. 🙂
