Next time you do tempura. Try to do a big brick of japanese pumpkin or squash. Like 2″x2″x2″ cube. Batter like normal but fry for 20 minutes. Then take out and wrap in tin foil to rest for 15 minutes. Remove the batter. It’ll be stupid soft and sweet like cake.
Prepping oyster mushrooms like chicken karaage is delicious. You should try it. Just marinate and cook the same way.
