I mean ultimately your mentor is the person to ask if they’ve got some bar of expectation for you. And if they can’t give you constructive criticism on *specific* areas of improvement… they’re not a good mentor.
What’s your own evaluation of your current skill level?
Not that I know anything, but to me a “perfect” nigiri experience has a lot of consistency and balance. Each piece just the right size one-bite morsel, with the right ratio of topping and rice, cleanly cut, lightly brushed with nikiri, and consistent from piece to piece.
