14. Bright orange/yellow is good (sweet), darker brownish is older (bitter, salty). Awesome! Also….sieve, grate in butter, and mix with hot pasta. Amazing also.

15. Urchin is an old way of saying porcupine. So a sea urchin is a sea porcupine. Which somehow makes them even more adorable and delicious.
