It’s interesting that this is an Japanese version of a Taiwan dish. There are a lot of Taiwan versions of Japanese dishes.
Taiwan ramen is a quite interesting dish with a unique history. It started as a staff dish in the Chinese restaurant “Misen” in Nagoya, which customers saw and requested to be served as well. From there it took off in popularity and became a regular menu item over time named “Taiwan ramen” since the chef was Taiwanese. This means there isn’t really a dish in Taiwan that equals this one, although there are for sure similarities.
The base soup is made from chicken bones, which then gets a healthy helping of fried minced meat, chili and garlic chives. The result is a wonderfully addicting and spicy ramen dish.
