You can use te form for the first verb like 盗んで逃げる, but you can’t use it for the last verb right before だけ.
“後は Verb (dictionary form) だけ だ/です” is a common set phrase.
コンタクトレンズを外して(はずして)、お風呂(ふろ)に入った(はいった)し、後(あと)は歯(は)を磨いて(みがいて)寝る(ねる)だけだ。I took off my contact lenses, took a bath, and now all I have to do is brush my teeth and go to bed.
There’s no connector here. Nor is it arbitrary.
You wouldn’t say 逃げてだけ here. ○○するだけ means ‘to only do X’. So, 後は車を盗み逃げるだけだ more or less has the nuance of ‘*all that’s left is to* get away (by stealing a car)’.
