I already accepted an interac job and am set to head out in March. I got an interview invitation for JET though and am wondering, on the off chance I got accepted, how hard/bad would it be to ditch interac after working a few months and go on JET? How would I get my background check and health check done if i’m already in Japan if/when I get accepted?

You would literally have to come back to your home country to depart with your cohort. You also can’t hold multiple visas at once and I believe the two are different so you’d definitely need to come back and give up your residence card. Might not be worth it for the couple months.
From what I’ve heard, interac has plenty of turn over so don’t worry about them.
Honestly, you can technically. The issue is that you’ll need to take time off while working at Interac to come home for the interview if it’s in person, else you can just not tell anyone if it’s remote. Not to mention the possible visa issues as they can’t apply for your visa while you already hold a visa. You would have to ditch interac basically as soon as you hear you’re accepted and come home to finish all the rest of the paperwork. But honestly, that’s not a bad thing. They’re used to people coming and dropping quickly.
I don’t know about the process, but it will probably be messy. If you applied back in your home country, you’d likely have to return and depart from there. Also, you will more than likely get blacklisted from ever working for Interac again if you quit mid-contract.
