At N3, I think most visual novels are going to be tough. You can use them for practice, but definitely expect to be looking up words constantly. Maybe some games aimed at kids would be a better place to start?
Only one word per sentence is actually really good. When I read my first native Japanese book I think I looked up 50% of all words.
IMO there are not really any requirements for reading anything, besides basic grammar. It only depends on the amount of lookups you personally call “comfortable”. I would say around N2,I’m playing dragon quest 11 and is really doable (for N3 lvl) if you are looking for alternative.
Btw 1 word per sentence is not bad at all.
