Looking for cooking courses for professional in Japan

Hello everyone! I am a professional chef (mostly European style) and I might have an opportunity to go to Japan/korea this winter in between Novembre/April for about 3weeks.

Does some of you know where I could find courses that would be interesting to take ?

I saw an article about learning how to prepare Fugu in about 2 weeks with an exam at the end, that could be a fun experience if it’s actually possible?

I tried to look but I wasn’t able to find anything on a professional level.

I sadly don’t speak Japanese.
