13 day itinerary in November. Please help me review and revise? Osaka-Kyoto-Nagano-Tokyo

Hey everyone, I’m trying to create a loose itinerary for an upcoming trip to Japan this November.
I would greatly appreciate any advice or revisions you might have, feel free to be brutally honest (especially if I’m being too ambitious). Pertinent info: I eat a plant-based diet, so many of my choices revolve around access to food I can eat. I am also aiming for a healthy balance of nature, old world Japan, and big city life. Lastly, I am an early riser, so I will be heading out most days around 6am or so to get as much tranquility as I can before the koyo crowds show up. Most evenings will be spent exploring nightlife and eating. THANK YOU IN ADVANCE!
