The Work Visa application form has a space where you have to note down the last date I departed Japan. I know the last date I entered Japan but I didn’t get the stamp when leaving. I also lost access to the email address I purchased the tickets and I don’t remember which airline I used… does immigration actually investigate whether to see if you correctly wrote down the exact dates?

An approximate date is fine. The important thing is that you didn’t overstay and weren’t issued a departure order.
