  1. I’ve been on a mission to find the best sushi around me, closing in on the last few places on my list of 30 across the greater Charlotte area. At some point I might put together a comprehensive overview post with notes.

    I’ve typically had… let’s say modest expectations for small places in strip malls and shopping centers. “Sushiya Japan” really pleasantly surprised me.

    Pictured here – if I remember right I got hirame, tai, hon-maguro, kanpachi, and chuu-toro. The chef threw in a piece of something else they had but I’m drawing a blank on what it was. Nice touch brushing each piece with a bit of a nikiri reduction and adding garnish as well. On top of that, he threw in a mini negi-toro handroll. And later on, talking about how it’s hard to find good saba, threw in a piece of that too. Really good.

    Great overall sushi bar experience. I wish it wasn’t a 45 minute drive from me! 😂

  3. Man, that looks top notch. We see so much mediocre sushi on here that stuff like this really stands out. Good thing it’s not close to me or I’d be there way too often.

  4. Looks really good! I’ve tried quite a few sushi joints in Charlotte, PrimeFish obviously stands out for its omakase, but that Chu-toro with pickled wasabi really stands out!!
