I want to start learning Japanese on pimsleur but I was wondering what resource I could use after I finish pimsleur something that explains the grammar but is still an audio course
Pimsleur will give you a lot of listen-and-repeat phrases. Basically a walking role play/phrase book. I don’t know how far it goes for the total course, but I assume not terribly far.
I would use it ALONG with another beginner material, especially to get exposure to reading and writing. Genki is a popular choice. The order of things may be shuffled between the two, so you might get an preview, but you’ll get the how and why with both.
Pimsleur is how I started back in the day too. People will give good recommendations on textbooks for grammar, I’m sure, but to keep progressing with your speaking, I recommend continuing shadowing practice.

This is a book I used if you can get your hands on it. It’ll not focus so much on textbook Japanese, but on real world expressions. https://www.amazon.co.jp/シャドーイング-日本語を話そう-初〜中級編-斎藤-仁志/dp/4874243541
Whatever other materials you use, if it comes with recordings of example conversations, shadow the hell out of them, just as you did with Pimsleur.
