5. This website Taste Atlas (https://www.tasteatlas.com) has a tremendous amount of interesting content. The map alone is worth checking out.

6. You can get the rare cuts at Koma Sushi in Brooklyn at their weekly bluefin tuna event. They don’t always have noten and hoho-niku, but they always have kamatoro!
