  1. Japan might not be the first country you think of when you hear the word “pasta,” but Wafu pasta is a whole subgenre of Japanese cuisine that mashes up Japanese ingredients like mentaiko and uni with Italian pasta. Nori is usually associated with sushi, but if you have a few sheets left over after making a batch of rolls or wrapping an onigiri, it makes a fantastic pasta sauce. Just boil your pasta in well-salted water, and a few minutes before the pasta is done, tear up some nori and add it to a pan along with a ladleful of pasta water. Dissolve the nori and then add some cream. Then you can transfer the par-boiled spaghetti into the pan with the cream sauce. For the one in the picture, I marinated some shrimp in garlic and soy sauce and pan-fried them before making the sauce. If you want the full recipe for it, you can [find it here](https://youtu.be/mYc0v2RgViw).

  2. Right on. Looks good. I’ll give it a shot. Do you think a tad of miso would be good or is the salt and umami content already good?
