  4. Holy cow this is the most complex nigiri ever — I’m writing it down so I can remember to try it some day; does this seem about right?

    * Marinated scallop:
    * 3-6 scallops
    * 1/4c japanese soy sauce
    * 1/4c sake
    * 1/4c mirin

    * Per each:
    * 1 marinated scallop
    * 15g prepared sushi rice
    * a pinch of prepared wasabi
    * 1/2 tsp Kewpie
    * 1 jalapeño round
    * a pinch of yuzu kosho
    * 3 drops yuzu juice
    * 1 pinch green onion
    * 1tsp masago

    I know you’d do it by feel when you’re actually making them, but I’m putting in amounts in case the video goes down and I have no idea what I was writing about

  6. Have you ever tried an otoro nigiri lightly smoked with hay? Put caviar (or similar for a bit of saltiness) light brush of ponzu and a green onion sliver. Magical bite.
