Digging into an incredible bowl of shio ramen at Funakoshi

  1. [Sakurajosui Funakoshi](https://youtu.be/GgdDxLp1oGI), or just Funakoshi, has been one of the hottest new shio ramen shops in Tokyo in 2023. Opened in January of 2023, they have created quite the buzz around their incredible shio ramen, which some ramen nerds even call the best shio ramen they ever had.

    While both shio and shoyu ramen options are available, I didn’t see a single person go for the shoyu ramen when I went and you have to search for a long time to find pictures of their shoyu ramen online.

    The broth base is a mix of chicken, pork and, more curiously, beef. It’s hard to pick any of them out of the resulting soup, which just shows how balanced it all is. The soup is opaque and you could call it a creamy paitan, without having a full emulsion to the extent that some paitans have. Overall super aromatic and rich, definitely something different compared to many clear chintan shio ramen out there.

    The noodles remind me very much of Kitakata style noodles, thin, flat and hand massaged, which gives them a wavy, almost curly texture. They are perfect to slurp up a great amount of soup, which clings very nicely to the noodles. I am personally a big fan of this type of noodles.
