24hrs should be OK. I’ve been doing it for 2 years, nothing happened so far. With that said, if I end up passing away because I ate sushi, I can live with that easily 😄
If you added sushi rice vinegar then your sushi rice should be OK,But if you just used rice with no vinegar treatment then the rice will come hard and unedible hope this helps🤙🤙🤙🤙

Leftover sushi….
If you plastic wrap the rolls tightly while lined up together (as they were before cutting), I find this helps to keep the rice from drying out! I will also add a little more rice vinegar if I know I won’t be eating them right away so the rice is more moist. I think two days after should be fine, I would just check for a fishy smell
