  1. I believe the salmon was frozen enough days at be lower than -20C.. You can get much beautiful salmon cuts if you cut it a little before completely thawed..

  2. Looks great for a first time! Try adding ultra thin lemon slices, peel and all, to your board next time (1mm or less thickness). Adds a little acid and bitterness to cut the buttery flavor of the avo/salmon combo.

  3. Looks don’t matter to me, if someone offered this to me for dinner I’d marry them. Just add a handful of pickled ginger on the side…

  4. Hope it’s sushi grade. I’ve seen a lot of people not realize there’s a difference
