This is probably an unpopular opinion, but depending on the length of your trip and whether or not you are able to refund your tickets/change to another date for the trip, I would most likely decide to postpone your application one year (unless you can change the date of your trip/get a refund, or have a virtual interview, then just do that).
I say that because the interview is 20 minutes-ish (compared to your week/multi-week trip) and you are not guaranteed the job, and the worst case scenario is that you miss out on this trip and you aren’t selected to go.
Secondly, traveling to Japan and getting more experience there would more than likely strengthen your application in a future year.
That being said, if your life hinges on having a full time job next July/August, then yeah maybe you may want to consider canceling the trip. And also, if your trip is less than a week long (like maybe a weekend only) then yeah I would just skip the trip and do the interview.
I think there are a lot of factors you need to weigh out to make a decision that is best for you.

I would first ask if it is possible to do your interview through Zoom or Google Meet. Be honest with the reason. It actually could strengthen your position, but you might also get some questions about things while you’re here (ie. what have you done in Japan? do you speak english to people? or try to use Japanese? etc.)
If they say no…well, cross that bridge when you come to it.

If US is still doing zoom interviews you should be fine. I had the same concern when I had to fly out for work in another state before my interview. I ended up doing the interview from my hotel room. Just make sure you have good internet connection and no interruptions.
Are you from Australia? They’re the only ones I know who have gotten results so far. Are your interviews in person or online? If it’s online, you can still do it during your trip as long as you have a computer and good wifi. If it’s in person I would look into trying to reschedule your trip or selling your ticket to someone else if the opportunity means a lot to you, but it depends on what you value more, traveling or the chance at an interview
