  1. Has anyone tried these? They look just like the sushi grade ones I buy at the local Japanese place. I’ll be pasteurizing them myself at 55c, but really tempted to try it raw

  2. I would give these a go raw. I read the news everyday and have never read anyone dying of raw scallops. System flush? Maybe. And a flush is a good thing once in a while. But dying? Never. Ha

I’ve been thinking about the scallop nigiri you made a while back almost every day — I haven’t even had scallop nigiri from a restaurant but that video stuck with me so much that I will not stop until I have made it with every single one of the many many many garnishes / yakumi that you used…

  4. You can get them super frozen from Hokkaido at a very similar price. Much better to control the thaw yourself if you’re eating raw.
