Assuming you are using ‘tanoshii’ for fun, then you’re correct except that drawing would take ‘ga’, no ‘(w)o’.
‘night’ (in terms of nighttime, right?) ni ‘drawing’ ga tanoshii desu.
You could also use の. In that case it would be like 夜の絵描きは楽しい where よるのえかき functions almost like a compound noun, ie “night-drawing is fun”
