  1. Shred a sweet potato on a spiral cutter and fry until crisp. Drain immediately and season.

  2. I use a spiral vegetable cutter and then boil them, Pat dry, then fry them. After you fry them transfer to a sheet pan with paper towels, use two forks to pull them apart and make them fluffy/stops them from cooking more.

  3. They make juilenne peelers and sell them in most grocery store cooking utensil sections.

  4. Stick a sweet potato on a clean cordless drill and put it up to a cheese grater with the smallest holes you can get, then deep fry them in a small pot.

Makes for a good side dish if you sprinkle some brown sugar on top of your sweet potato moss.

  5. The little jagged attachment on a mandoline. Peel potatoes, grate on mandoline, squeeze out water in paper towels then fry.

  6. Peel and rinse a sweet potato. If you want it to look like this, you can use a spiralizer. Or if you just want the flavor and texture you can use a grater, or just a nice sharp knife to cut it as thinly as possible. Once they’re the desired shape, dry thoroughly with a paper towel.

Get a pot with some oil and heat it to around 350 degrees. You can use a thermometer to check. Drop the potatoes in the oil. If they’re really thin like that it’ll only take maybe 10 seconds.
