Since ALT teaching isn’t lucrative long term let alone short term, any other options besides tech? I don’t mind paying for a shitty 4 year online degree so long as it’s recognized by Japan. Especially interested in biology, chem, and agricultural science. Anyone have experience working these fields in Japan?

If you don’t have any previous experience how can you enter the market mid career?
You’re posting in the teaching subreddit, so many of us would say get into actual teaching here. If you want to learn about other jobs, I would suggest going to japanlife and ask as your audience would be more than current teachers and assistant teachers.
I did go into tech after getting an online master’s in IT via an American university. But I feel like things such as biology, chemistry, etc., you need to be in person. How are you going to do labs and experiments?
If you have native-level Japanese just use any recruitment agency.
If not, network as it were your full-time job. An acquittance of mine got a job at Fujifilm by a recommendation of her lover to her husband who is a product manager there.
If you are exceptionally talented at something, or have a lot of experience in a particular field, and you can handle yourself in Japanese, you can do most things outside of civil service.
Adding a “shitty 4-year online degree” to your ALT resume isnt going to get you anywhere.
Why do you need to stay in Japan? Why not think about your home country and get experience there?
If you speak very good Japanese and also have additional hard skills that can be turned into a career than definitely! If you don’t speak Japanese and are looking for something else entry level… maybe try recruiting? I’m not sure, unless there are any international labs and research facilities that happen to be in Japan but who would want native English speaking staff
