Identifying ingredients/recipes for seasonal appetizers from omakase (details in comments)

At the Takumi-Tei omakase restaurant in Walt Disney World, there were these five ‘zensai moriawase’ seasonal appetizers, which I tried and instantly was like, “I have to learn how to make this.” Some of them are easy to figure out recipes for, like the edamame and the crab salad. For others, I need the eyes of more experienced people in order to figure out the ingredients and recipes for them. For example, aside from the uni, what else is in the shot glass that gives it a briny and vinegary taste? What is the seaweed under the ikura and how is it prepared?   2. Are the greens really seaweed? It looks like there are stems and it almost just looks like one of the asian leafy greens.

  3. The stuff in the shot glass with the uni looks like mozuku, a kind of seaweed usually prepared with rice vinegar, mirin and soy sauce.
