What’s a recommended amount of time for a day trip to Yokohama? I plan to start from Tokyo and make a stop to Yokohama before continuing to my final destination in Kyoto. I am interested in visiting the cup noodle museum, ideally at 10:00, grabbing a quick lunch somewhere (got recs?), and checking out the gundam factory. Would it make sense to go to Chinatown? What time should I plan to leave Yokohama to take the shinkansen to Kyoto?

Yokohama has much more than cup noodles and gundam, Chinatown being the main attraction. So yes, not only it makes sense to visit it, it is a must. There’s much more, worth researching a little.
Meanwhile, the Shinkansen departs from Shin-Yokohama. It’s not the same station as Yokohama. The last departure is about 9:30 PM, so understandably you need to be earlier at Yokohama station to get to Shin-Yokohama first.
