I keep forgetting to post this


Something I put together for my kitchen manager, didn’t put much care into platting. This wasn’t a sushi spot but I made it work. Basically a cali without rice or nori, rolled in tuna, sliced Fresno on top. Honey kimchee sauce. Was tasty.

  4. Ahhh this is the delicious antitheses of fusion. I avoid traditional cali rolls because I hate kani, but I’d make an exception for this.

  6. Wow, that looks awesome! A local sushi restaurant by my house makes something very similar. They call it the So Cupcake Roll. No rice, wrapped in salmón, tuna, and/or albacore. It’s by far my favorite roll. Nice work!
