寿司調味料
The closest word I know is 薬味 (yakumi). It’s not about sushi condiments, but it’s a term that covers herb or spice like ingredients in Japanese foods.
The term used to refer to soy sauce, pickled ginger, wasabi, and other similar condiments as a group in Japanese is “sushi no tsuma” (寿司の蔦). “Tsuma” means condiments or accompaniments, and “sushi no” indicates that they are specifically used for sushi. So “sushi no tsuma” translates to “sushi condiments” or “sushi accompaniments” in English. (This is thanks to ChatGPT. I am not a huge fan of ginger or wasabi, so wouldn’t know based on my own experience)
Maybe just 寿司の添え物 (_sushi no soemono_, “sushi accompaniments”)?
