  1. [Niboshimania](https://youtu.be/54ep-FVxrrY) is currently probably my favorite niboshi ramen shop in Tokyo and easily in my top 10 ramen shops overall at the moment. The name itself makes it absolutely clear what this shop is all about: Great niboshi ramen. Niboshimania opened its doors in September of 2022 and is almost daily reinventing itself with an always changing menu of niboshi ramen and aedama add ons. You can find Niboshimania near Kamata station, which is a bit to the South of the center of Tokyo, towards Yokohama.

  2. I def need to try niboshi ramen. I tried to make niboshi broth at home and it was just super freaking bitter. I had a tempura omakase with whole niboshi and I remember the head was quite bitter but the rest was pleasantly fishy. The broth I made tasted like pure niboshi head concentrate 🤮🤢

    How bitter was this broth?
