1. No idea! It looks like it could be sashimi of a land animal? Perhaps beef or horse?

5. We’ve been served basashi multiple times when we have visited mountainous/interior areas of Japan. We’re now smart enough to list no horse meat as a food preference

   Nagano and freshly made soba certainly are a winning combination.
