  1. salmon roe enhances the sea-saltiness of the uni, while the egg enhances the creaminess of it. im thinking, perhaps this may also work with scallop, but with tobiko instead, with the quail egg still there.

  2. It’s egg all the way down! This looks amazing — I need to try ikura and quail egg (probably separately) some day

  3. Ask for them to serve it without the cucumber and kale next time. Yes it’s for decoration but placing temaki onto wet ingredients is going to make it less good. Tenaki should be consumed as soon as it’s made, you want the nori to be as crunchy as possible when eating it.
