  1. It’s amazing what you might find in a small town!
    I live in a relatively small California town (not Bay Area or LA suburbs) & we somehow have a place that makes the best sushi rice you’ve ever had in your life & a 3rd Generation Japanese sushi chef who makes some really rare, authentic stuff. I’ve been to many cities & states yet I’ve never had better sushi than right here in my hometown. It’s incredible

  2. And that sushi place could very well be owned by a Chinese proprietor.

    Big transition in the restaurant industry over the past 10-15 years or so as Chinese restaurant owners realized that the margins in sushi and Japanese food were much higher than in normal Chinese takeout.

    Also, talk to the owner of the joint about uni. They’ll usually be willing to special order it for you if you tell them you’ll buy all or at least a substantial portion of the amount they have to order.

  3. It’s okay, but I don’t recommend eating it. Usually it the customers preference to eat it but they don’t know it can be toxic.

  4. Sometimes I think that delicious food does not depend on the place or not, but on professionals, on the hands of chefs! A talented chef can be in any small village! And he will create such masterpieces! mmmm very tasty!

  5. I’ve been in the sushi business since 99. The deal is your Sysco/USfoods suppliers can give you everything you need to make “decent” sushi. All the fish frozen and fresh, rice, nori, everything. So anyone can make it now but they’ve sucked the heart and soul out of it. It’s McDonald’s now. In my opinion anyway but at least small towns can have a bar too. Cheers.

  6. Yeah one thing you wouldn’t expect is how incredibly popular sushi is in Texas.
