Sushi Inomata – 18 course Omakase


Inomata has been on my Want-to-go list for a very long time. Inomata-San specializes in aged nigiri. He serves all of the maguro zuke style. He would show you the fresh cuts of the maguro beforehand with a sign for the source (鳥取縣 境港 for my visit). Then take out the aged maguro from the kitchen and simmer in an urn until ready to serve.

Enjoyed every course, but the makogarei, shima-ebi, aged katsuo, all maguro-zuke nigiri’s, kani, and whale nigiri’s stood out and were memorable. Aging added depths of flavor that I haven’t experienced before in other sushiya’s. About 7/10 full after the meal, so I placed additional orders for shima-ebi and kani. Would have added katsuo and all the maguro-zuke nigiri’s if available 😁.

Will definitely return again, maybe in the winter to try his signature ikura.

  1. That looks like a great meal. #12, tairagai is pen shell which in my opinion is closer in taste/texture to scallop than razor clam.
