I had this in February as part of the omakase course at Tokyo Ten Shibuya and it had a really nice texture to it, but I could never find it on the menu at any other restaurant I went to. If anyone knows what fish this is, I would really appreciate it.

Looks like a rock fish type fish. Maybe red snapper.

Hamachi is my guess, cut with a very sharp knife.

Hamachi. Maybe rock cod. You can tell the difference by taste. If the fish was fatty, it’s hamachi. If it was light and not fatty, it was rock cod

Looks like fish might have been aged in kombu, I’ve seen this look
Either red snapper or maybe a died tilapia even I see them very common as a “red snapper” substitute that’s cheaper
