Question: Frozen Shime Saba


Hi! So I picked up this frozen filet of Shime Saba at my local Japanese grocery. I’m thawing it out now, but assuming I don’t have to cook it at all since it’s marinated/cured in vinegar?

Was planning on making some nigiri with it!

  1. That’s correct Spanish mackerel is often cured like salmon and can be eaten directly. Please open the package before thawing, the vacuum seal will force brine back into the fish and give it a weird texture. It was frozen prior to sealing.

  2. Yes, ready to use once thawed as it’s been marinated specifically for sushi.

  3. You are right there is no need to cook it, but you should expect it to taste quite sour
